Sorpotel
The Portuguese ruled Goa for 450 years. Though Goa got independence but its influence can still be seen in goan cultures, particularly on goan dishes. Species brought by the Portuguese are still seen in goan dishes . One of the well known dishes in Goa is Sorpotel or Sorpatel. Its not an everyday dish but made only on occasions. No wedding, no feast is completed without Sorpotel In Chatholic Houses.
Sorpotel is a red meat curry that is wonderfully tangy and spicy at the same time . Goan Sorpotel is usually made using pork, which again is famous in Goa. Each household in Goa have their unique way of preparing it. However its the type of chillies with or without seeds that determines how fiery hot or mildly hot the sorpotel will be. Sorpotel includes regular ingredients like pork liver , spices and in some version pork blood, roasted blends of spices . It contains a lot of viniger which acts as a preservative as well as adding sourness . They say the more days the sorpotel is kept the more delicious it becomes. In olden days it was prepared in earthen pots because they believed that the taste also varies on the utensils used.
Sorpotel is accompanied by Sannas. However it can also be enjoyed with bread and rice but Sannas with sorpotel is a goan favorite. Even I can't resist it and will eat it till my hearts content. There is no one in my family who can resist the taste of Sorpotel with Sannas.
Goans take pride in preparing it. We can say Wherever we go sorpotel runs in the blood of every Goan.
